Broccoli Lemon Chicken with Cashews

Ingredients

Calories – 375 Kcal per serving

  • 1 tbsp Coroli Cow Ghee or Coroli Organic Extra Virgin Olive Oil
  • 340g of mini chicken breast fillets
  • 2 sliced garlic cloves
  • 200g of tender stem broccoli
  • 200ml chicken stock
  • 1 tsp cornflour
  • 1 tbsp of clear honey
  • a large handful of roasted cashews
  • the zest of half a lemon
  • one full lemon juice

Preparation

  1. Heat Coroli cow ghee or Organic Extra Virgin Olive Oil in a wok or a large frying pan.
  2. Add the chicken breasts and fry for 3-4 minutes until golden.
  3. Remove the chicken from the pan then add the broccoli and garlic. 
  4. Stir fry for about a minute then cover it and cook for 2 more minutes, until almost tender.
  5. Mix the stock with honey and cornflour then pour the ingredients into the pan. Stir until the texture becomes thickened.
  6. Add the chicken back into the pan, then add the lemon zest and juice after it heats through.
  7. Add the cashew nut and stir through.
  8. Serve with bread, basmati rice or mashed potatoes.
