Tabbouleh, or Parsley Salad, is a delicious Lebanese salad, prepared with many nutritious ingredients like high-fibre bulgur wheat, organic extra olive oil, cucumbers, tomatoes and parsley. Tabbouleh is a light option that can be the perfect accompaniment to any meal or even a meal for itself! It is easy to prepare ahead and can be stored for a couple of hours.

Ingredients

Calories – 127 cal per serving

  • 1/2 cup fine bulgur
  • 1 cup boiling-hot water
  • 3 tablespoons Coroli Organic Extra Virgin Olive Oil
  • 2 cups of fresh flat-leaf parsley, chopped
  • 1/2 cup fresh mint, chopped
  • 1/2 seedless cucumber, peeled and cut into small pieces
  • 2 medium tomatoes, cut into small pieces
  • 3 tablespoons fresh lemon juice
  • 1/4 teaspoon black pepper
  • 3/4 teaspoon salt

Preparation

  1. Stir the bulgur with olive oil in a large bowl, then add the boiling water and cover it tightly.
  2. Let it sit for 15 minutes then drain it in a sieve to remove excess water.
  3. Move the bulgur to another bowl with the remaining ingredients: 2 tablespoons of Coroli olive oil, parsley, fresh mint, cucumber, tomatoes and squeezed lemon juice.
  4. Combine the ingredients well and finish off with salt and pepper to taste.
  5. Keep refrigerated and serve cold as a side salad.
