Tortilla Ingredients:



  1. Combine the flour, salt and baking powder in a medium-size bowl and use a sturdy silicone spatula or a sturdy wooden spoon to mix the dry ingredients until well combined.
  2. Make a well in the centre of the dry ingredients and start adding the olive oil and water.
  3. Stir the mixture well from the bottom up until all the dry ingredients are consolidated and the dough begins to come together and form a ball.
  4. Place the dough on a floured work surface and knead for 1-2 minutes until the dough becomes nice and smooth in consistency.
  5. Transfer dough to a lightly floured work surface and divide it into 16 equal portions.
  6. Move each piece to coat with flour and form each piece into a small ball then flatten with the palm of your hand.
  7. Cover flattened balls of dough with a clean kitchen towel allowing it to rest for 15 minutes (or up to 2 hours).
  8. Meanwhile, heat a large pan over medium heat and roll each dough piece into a rough circle.
  9. Place one dough circle into the pan and allow it to cook 45 seconds to 1 minute or until the bottom surface has brown spots and become bubbly.
  10. Flip to other side and cook for 15 to 20 seconds.
